Description

Crispy on the outside and soft on the inside, these delicious cheese puffs are a perfect snack or side dish, made using leftover mashed potatoes.


Ingredients

  • 2 cups mashed potatoes
  • 1 cup shredded cheese (cheddar, mozzarella, or choice)
  • 1 egg
  • 1/4 cup chopped green onions
  • 1/2 cup breadcrumbs
  • 2 tablespoons melted butter
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 teaspoon garlic powder


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, mix together the mashed potatoes, shredded cheese, egg, chopped green onions, breadcrumbs, melted butter, salt, pepper, and garlic powder until well combined.
  3. Scoop the mixture and shape it into small balls or puffs.
  4. Place the puffs on a baking sheet lined with parchment paper.
  5. Bake for 20-25 minutes or until golden brown.
  6. Remove from the oven and let cool slightly before serving.

Notes

Serve warm, with your favorite dipping sauce. Can be refrigerated for up to 3 days or frozen for longer storage.
