Description
Crispy on the outside and soft on the inside, these delicious cheese puffs are a perfect snack or side dish, made using leftover mashed potatoes.
Ingredients
- 2 cups mashed potatoes
- 1 cup shredded cheese (cheddar, mozzarella, or choice)
- 1 egg
- 1/4 cup chopped green onions
- 1/2 cup breadcrumbs
- 2 tablespoons melted butter
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/2 teaspoon garlic powder
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, mix together the mashed potatoes, shredded cheese, egg, chopped green onions, breadcrumbs, melted butter, salt, pepper, and garlic powder until well combined.
- Scoop the mixture and shape it into small balls or puffs.
- Place the puffs on a baking sheet lined with parchment paper.
- Bake for 20-25 minutes or until golden brown.
- Remove from the oven and let cool slightly before serving.
Notes
Serve warm, with your favorite dipping sauce. Can be refrigerated for up to 3 days or frozen for longer storage.
