Ingredients
- 2 chicken breasts
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 1 cup carrots, diced
- 1 cup celery, diced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot, sauté the chopped onion and minced garlic until fragrant.
- Add the diced carrots and celery and cook for a few minutes until they start to soften.
- Add the chicken breasts and chicken broth and bring to a boil.
- Reduce heat and simmer until the chicken is cooked through.
- Remove the chicken, shred it, and return it to the pot.
- Stir in the heavy cream and Italian seasoning.
- Season with salt and pepper to taste.
- Serve hot, garnished with fresh parsley.
