A refreshing and vibrant salad that celebrates summer with fresh tomatoes, cucumbers, and basil.
Ingredients
- 4 large ripe tomatoes
- 1 cucumber
- 1 small red onion
- 1/4 cup fresh basil leaves
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- Salt and pepper to taste
Instructions
- Wash the tomatoes and cucumber. Slice into bite-sized pieces.
- Thinly slice the red onion.
- In a large bowl, combine tomatoes, cucumber, and red onion.
- Tear basil leaves and add to the salad.
- Drizzle with olive oil and balsamic vinegar.
- Season with salt and pepper to taste.
- Toss gently until combined.
- Serve immediately or let sit for a few minutes for flavors to meld.
Notes
Best enjoyed fresh. Can be stored in an airtight container for 1-2 days, though it may become watery.
