A bright and refreshing salad combining orzo pasta, tangy lemon juice, and creamy feta cheese, perfect for a light lunch or side dish.
Ingredients
- 1 cup orzo pasta
- 2 cups water
- 1/4 cup fresh lemon juice
- 1/4 cup olive oil
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 cup red onion, finely chopped
- 1/2 cup feta cheese, crumbled
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Cook the orzo pasta in boiling salted water according to package instructions until al dente. Drain and let it cool.
- In a large bowl, whisk together lemon juice, olive oil, salt, and pepper.
- Add the cooled orzo, cherry tomatoes, cucumber, red onion, and feta cheese to the bowl.
- Toss gently to combine all the ingredients with the dressing.
- Garnish with fresh parsley before serving. Enjoy!
Notes
Store any leftovers in an airtight container in the fridge for up to 3 days. Add a splash of olive oil or lemon juice to revive it.
