Description

A bright and refreshing salad combining orzo pasta, tangy lemon juice, and creamy feta cheese, perfect for a light lunch or side dish.


Ingredients

  • 1 cup orzo pasta
  • 2 cups water
  • 1/4 cup fresh lemon juice
  • 1/4 cup olive oil
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 cup red onion, finely chopped
  • 1/2 cup feta cheese, crumbled
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)


Instructions

  1. Cook the orzo pasta in boiling salted water according to package instructions until al dente. Drain and let it cool.
  2. In a large bowl, whisk together lemon juice, olive oil, salt, and pepper.
  3. Add the cooled orzo, cherry tomatoes, cucumber, red onion, and feta cheese to the bowl.
  4. Toss gently to combine all the ingredients with the dressing.
  5. Garnish with fresh parsley before serving. Enjoy!

Notes

Store any leftovers in an airtight container in the fridge for up to 3 days. Add a splash of olive oil or lemon juice to revive it.
