Ingredients
- 2 cups rolled oats
- 1/2 cup peanut butter
- 1/4 cup honey or maple syrup
- 1/4 cup lemon juice
- Zest of 1 lemon
- 1/2 teaspoon vanilla extract
- Pinch of salt
Instructions
- In a mixing bowl, combine rolled oats, peanut butter, honey (or maple syrup), lemon juice, lemon zest, vanilla extract, and salt. Stir until well blended.
- Scoop tablespoon-sized portions of the mixture and form them into cookie shapes.
- Place the cookies on a parchment-lined baking sheet and refrigerate for at least 30 minutes until firm.
