Description

A bright and tangy treat combining rich fudge with refreshing lemon flavor, perfect for gatherings or a sweet snack.


Ingredients

  • 2 cups granulated sugar
  • 1/2 cup unsalted butter
  • 1/2 cup heavy cream
  • 1/4 cup lemon juice
  • 1 tablespoon lemon zest
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 2 cups powdered sugar


Instructions

  1. In a medium saucepan, combine granulated sugar, butter, and heavy cream. Cook over medium heat, stirring frequently, until the mixture comes to a boil.
  2. Allow it to boil for 5 minutes without stirring. Remove from heat.
  3. Stir in lemon juice, lemon zest, vanilla extract, and salt.
  4. Gradually add powdered sugar while stirring until smooth.
  5. Pour into a greased 8×8 inch baking dish and spread evenly.
  6. Let it cool at room temperature until set, then cut into squares.

Notes

Serve with extra lemon zest for garnish. Pairs well with tea or coffee.
