Ingredients
- 2 cups granulated sugar
- 1/2 cup unsalted butter
- 1/2 cup heavy cream
- 1/4 cup lemon juice
- 1 tablespoon lemon zest
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 2 cups powdered sugar
Instructions
- In a medium saucepan, combine granulated sugar, butter, and heavy cream. Cook over medium heat, stirring frequently, until the mixture comes to a boil.
- Allow it to boil for 5 minutes without stirring. Remove from heat.
- Stir in lemon juice, lemon zest, vanilla extract, and salt.
- Gradually add powdered sugar while stirring until smooth.
- Pour into a greased 8×8 inch baking dish and spread evenly.
- Let it cool at room temperature until set, then cut into squares.
Notes
Serve with extra lemon zest for garnish. Pairs well with tea or coffee.
