Description

Delightful lemon brownies that combine the rich texture of traditional brownies with a zesty lemon flavor, perfect for any occasion.


Ingredients

  • 15 ounces yellow cake mix
  • 3.4 ounces lemon instant pudding mix
  • 1/3 cup fresh lemon juice
  • 3 large eggs
  • 1 teaspoon lemon zest
  • 1 cup powdered sugar
  • 1 tablespoon lemon juice
  • Lemon zest for garnish


Instructions

  1. Line an 8-inch square baking pan with parchment paper and spray it lightly with cooking spray.
  2. Preheat your oven to 350 degrees Fahrenheit.
  3. In a mixing bowl, combine the yellow cake mix, lemon instant pudding mix, lemon juice, eggs, and lemon zest. Mix until well combined.
  4. Pour the batter into the prepared baking pan and spread it evenly.
  5. Bake for 22-24 minutes, or until a toothpick inserted into the middle comes out clean.
  6. Allow the brownies to cool for 10 minutes, then lift them out of the pan and cool completely.
  7. In a separate bowl, whisk together powdered sugar and lemon juice to make a glaze. If it’s too thick, add more lemon juice until you reach the desired consistency.
  8. Slice the brownies, drizzle with the lemon glaze, and garnish with lemon zest.
