Delightful lemon brownies that combine the rich texture of traditional brownies with a zesty lemon flavor, perfect for any occasion.
Ingredients
- 15 ounces yellow cake mix
- 3.4 ounces lemon instant pudding mix
- 1/3 cup fresh lemon juice
- 3 large eggs
- 1 teaspoon lemon zest
- 1 cup powdered sugar
- 1 tablespoon lemon juice
- Lemon zest for garnish
Instructions
- Line an 8-inch square baking pan with parchment paper and spray it lightly with cooking spray.
- Preheat your oven to 350 degrees Fahrenheit.
- In a mixing bowl, combine the yellow cake mix, lemon instant pudding mix, lemon juice, eggs, and lemon zest. Mix until well combined.
- Pour the batter into the prepared baking pan and spread it evenly.
- Bake for 22-24 minutes, or until a toothpick inserted into the middle comes out clean.
- Allow the brownies to cool for 10 minutes, then lift them out of the pan and cool completely.
- In a separate bowl, whisk together powdered sugar and lemon juice to make a glaze. If it’s too thick, add more lemon juice until you reach the desired consistency.
- Slice the brownies, drizzle with the lemon glaze, and garnish with lemon zest.
