Description

Transform your leftover mashed potatoes into crispy and cheesy puffs, perfect as a snack, side dish, or appetizer.


Ingredients

  • 3 cups mashed potatoes
  • 1 cup shredded cheese (cheddar, mozzarella, etc.)
  • 1/4 cup all-purpose flour
  • 2 tablespoons Parmesan cheese
  • 2 tablespoons chives
  • 1/3 cup sour cream
  • Salt to taste
  • 2 eggs, beaten


Instructions

  1. Preheat the oven to 400°F and grease a muffin tin.
  2. Beat the eggs and mix in the sour cream until smooth.
  3. Add the cheeses, chives, and salt to the egg mixture.
  4. Gently fold in the mashed potatoes until well combined.
  5. Spoon the mixture into the muffin cups, filling each one to the top.
  6. Bake for 20-25 minutes until golden brown and puffed up.
  7. Cool slightly before removing from the tin.
  8. Serve warm as a side dish or snack.

Notes

For extra crispy puffs, spray the tops with cooking spray before baking. Feel free to add cooked bacon or different herbs for variation.
