Transform your leftover mashed potatoes into crispy and cheesy puffs, perfect as a snack, side dish, or appetizer.
Ingredients
- 3 cups mashed potatoes
- 1 cup shredded cheese (cheddar, mozzarella, etc.)
- 1/4 cup all-purpose flour
- 2 tablespoons Parmesan cheese
- 2 tablespoons chives
- 1/3 cup sour cream
- Salt to taste
- 2 eggs, beaten
Instructions
- Preheat the oven to 400°F and grease a muffin tin.
- Beat the eggs and mix in the sour cream until smooth.
- Add the cheeses, chives, and salt to the egg mixture.
- Gently fold in the mashed potatoes until well combined.
- Spoon the mixture into the muffin cups, filling each one to the top.
- Bake for 20-25 minutes until golden brown and puffed up.
- Cool slightly before removing from the tin.
- Serve warm as a side dish or snack.
Notes
For extra crispy puffs, spray the tops with cooking spray before baking. Feel free to add cooked bacon or different herbs for variation.
