A delightful dish combining zucchini, ricotta, and marinara sauce, perfect for any meal.
Ingredients
- 4 medium zucchini, sliced lengthwise into 1/4-inch strips
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup ricotta cheese
- 1 cup marinara sauce
- 1 cup shredded mozzarella cheese
- Fresh basil for garnish
Instructions
- Preheat the oven to 375°F (190°C).
- In a bowl, combine the sliced zucchini with olive oil, garlic powder, oregano, salt, and black pepper. Toss to coat evenly.
- Arrange the zucchini strips in a single layer on a baking sheet and roast for about 15 minutes until slightly tender.
- In a baking dish, spread a layer of marinara sauce on the bottom.
- Layer half of the roasted zucchini strips on top of the sauce, then spread half of the ricotta cheese over the zucchini.
- Top with half of the mozzarella cheese.
- Repeat the layers with the remaining zucchini, ricotta, and marinara sauce. Finish with the remaining mozzarella cheese on top.
- Bake in the preheated oven for 25-30 minutes until the cheese is bubbly and golden brown.
- Garnish with fresh basil before serving.

Pair with a salad or crusty bread. Drizzle olive oil or balsamic vinegar for extra flavor.
