Description

A delightful dish combining zucchini, ricotta, and marinara sauce, perfect for any meal.


Ingredients

  • 4 medium zucchini, sliced lengthwise into 1/4-inch strips
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup ricotta cheese
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • Fresh basil for garnish


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, combine the sliced zucchini with olive oil, garlic powder, oregano, salt, and black pepper. Toss to coat evenly.
  3. Arrange the zucchini strips in a single layer on a baking sheet and roast for about 15 minutes until slightly tender.
  4. In a baking dish, spread a layer of marinara sauce on the bottom.
  5. Layer half of the roasted zucchini strips on top of the sauce, then spread half of the ricotta cheese over the zucchini.
  6. Top with half of the mozzarella cheese.
  7. Repeat the layers with the remaining zucchini, ricotta, and marinara sauce. Finish with the remaining mozzarella cheese on top.
  8. Bake in the preheated oven for 25-30 minutes until the cheese is bubbly and golden brown.
  9. Garnish with fresh basil before serving.

Notes

Pair with a salad or crusty bread. Drizzle olive oil or balsamic vinegar for extra flavor.
