Description
Karpatka is a beloved Polish dessert consisting of two layers of choux pastry filled with a creamy filling. Light, delicate, and delicious, it’s perfect for various occasions.
Ingredients
- 100 g butter
- 150 g sugar
- 1 pinch of salt
- 150 g all-purpose flour
- 250 ml water
- 400 ml heavy cream (for the filling)
- 1 teaspoon vanilla extract
Instructions
- In a pot, bring water, butter, salt, and part of the sugar to a boil. Once boiling, add flour and stir vigorously until the dough pulls away from the sides.
- Remove from heat and let it cool.
- Once cooled, add eggs one at a time, mixing continuously.
- Divide the dough into two parts and bake in a preheated oven at 200°C for about 20-25 minutes.
- For the cream: Whip the heavy cream with the remaining sugar and vanilla extract.
- Once the cakes are cooled, spread the cream on one layer, cover with the second layer, and serve.
Notes
Best served chilled. Can be decorated with powdered sugar for a nicer appearance.
