Description

Karpatka is a beloved Polish dessert consisting of two layers of choux pastry filled with a creamy filling. Light, delicate, and delicious, it’s perfect for various occasions.


Ingredients

  • 100 g butter
  • 150 g sugar
  • 1 pinch of salt
  • 150 g all-purpose flour
  • 250 ml water
  • 400 ml heavy cream (for the filling)
  • 1 teaspoon vanilla extract


Instructions

  1. In a pot, bring water, butter, salt, and part of the sugar to a boil. Once boiling, add flour and stir vigorously until the dough pulls away from the sides.
  2. Remove from heat and let it cool.
  3. Once cooled, add eggs one at a time, mixing continuously.
  4. Divide the dough into two parts and bake in a preheated oven at 200°C for about 20-25 minutes.
  5. For the cream: Whip the heavy cream with the remaining sugar and vanilla extract.
  6. Once the cakes are cooled, spread the cream on one layer, cover with the second layer, and serve.

Notes

Best served chilled. Can be decorated with powdered sugar for a nicer appearance.
