Ingredients

  • 1 pound fresh green beans, trimmed
  • 2 cups cherry tomatoes, halved
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup fresh basil leaves, torn
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste
  • 1/4 cup feta cheese, crumbled (optional)


Instructions

  1. Blanch the green beans in boiling water for 3-4 minutes until bright green and tender-crisp. Drain and immediately transfer to a bowl of ice water to stop cooking.
  2. In a large bowl, combine the cooled green beans, halved cherry tomatoes, sliced red onion, and torn basil leaves.
  3. In a separate small bowl, whisk together the olive oil, balsamic vinegar, Dijon mustard, salt, and pepper.
  4. Pour the dressing over the salad and toss gently to combine.
  5. If using, sprinkle the crumbled feta cheese on top before serving.

Notes

For added flavor, consider using fresh lemon juice or toasted nuts. Store leftovers in the refrigerator and enjoy within 2-3 days.
