Description

Delicious Buckeye Bars combine creamy peanut butter and rich chocolate, offering an irresistible treat perfect for any occasion.


Ingredients

  • 8 tablespoons salted sweet cream butter, softened
  • 3 cups creamy peanut butter
  • 2 teaspoons pure vanilla extract
  • 4 cups powdered sugar
  • 12 ounces semi-sweet chocolate chips
  • 2 tablespoons vegetable oil


Instructions

  1. Line a 9×13 inch baking dish with parchment paper.
  2. Using a stand mixer or a handheld mixer, beat the softened butter for 1 minute until smooth.
  3. Add the peanut butter and vanilla, and continue mixing for 1 minute until smooth.
  4. Lower the mixer speed and add powdered sugar 1 cup at a time, mixing well after each addition.
  5. Once everything is mixed, spread the peanut butter mixture evenly in the prepared baking dish.
  6. In a microwave-safe bowl, add chocolate chips and oil.
  7. Heat for 1 minute, stir, and continue to mix in 15-second intervals until completely smooth.
  8. Spread the chocolate over the peanut butter layer.
  9. Cover and chill in the refrigerator for 15 to 20 minutes.
  10. Once chilled, slice the Buckeye Bars into 15 pieces and chill for an additional 1 hour and 45 minutes.
  11. Remove from the dish using the parchment paper and serve.

Notes

Serve chilled for best texture. Store in an airtight container in the refrigerator for up to a week.
