Delicious Buckeye Bars combine creamy peanut butter and rich chocolate, offering an irresistible treat perfect for any occasion.
Ingredients
- 8 tablespoons salted sweet cream butter, softened
- 3 cups creamy peanut butter
- 2 teaspoons pure vanilla extract
- 4 cups powdered sugar
- 12 ounces semi-sweet chocolate chips
- 2 tablespoons vegetable oil
Instructions
- Line a 9×13 inch baking dish with parchment paper.
- Using a stand mixer or a handheld mixer, beat the softened butter for 1 minute until smooth.
- Add the peanut butter and vanilla, and continue mixing for 1 minute until smooth.
- Lower the mixer speed and add powdered sugar 1 cup at a time, mixing well after each addition.
- Once everything is mixed, spread the peanut butter mixture evenly in the prepared baking dish.
- In a microwave-safe bowl, add chocolate chips and oil.
- Heat for 1 minute, stir, and continue to mix in 15-second intervals until completely smooth.
- Spread the chocolate over the peanut butter layer.
- Cover and chill in the refrigerator for 15 to 20 minutes.
- Once chilled, slice the Buckeye Bars into 15 pieces and chill for an additional 1 hour and 45 minutes.
- Remove from the dish using the parchment paper and serve.
