Healthy and delicious breakfast cookies made with ripe bananas and nutritious ingredients, perfect for busy mornings.
Ingredients
- 1/2 cup mashed bananas (from 2 ripe bananas)
- 3/4 cup almond butter
- 1/3 cup honey
- 1 teaspoon vanilla extract
- 2 1/2 cups old-fashioned rolled oats
- 1 teaspoon cinnamon
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup golden raisins (add-in)
- 1/2 cup dark chocolate chips (add-in)
- 1/4 cup pepitas (shelled pumpkin seeds) (add-in)
- 2 tablespoons flax seeds (add-in)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, mix together the mashed bananas, almond butter, honey, and vanilla extract until smooth.
- In another bowl, combine the rolled oats, cinnamon, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture and stir until well combined.
- Fold in your choice of add-ins: golden raisins, dark chocolate chips, pepitas, and flax seeds.
- Drop tablespoon-sized portions of the dough onto the prepared baking sheet.
- Bake for 12-15 minutes or until the edges are golden.
- Let cool before enjoying your breakfast cookies on the go!
