Description

Healthy and delicious breakfast cookies made with ripe bananas and nutritious ingredients, perfect for busy mornings.


Ingredients

  • 1/2 cup mashed bananas (from 2 ripe bananas)
  • 3/4 cup almond butter
  • 1/3 cup honey
  • 1 teaspoon vanilla extract
  • 2 1/2 cups old-fashioned rolled oats
  • 1 teaspoon cinnamon
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup golden raisins (add-in)
  • 1/2 cup dark chocolate chips (add-in)
  • 1/4 cup pepitas (shelled pumpkin seeds) (add-in)
  • 2 tablespoons flax seeds (add-in)


Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, mix together the mashed bananas, almond butter, honey, and vanilla extract until smooth.
  3. In another bowl, combine the rolled oats, cinnamon, baking powder, and salt.
  4. Gradually add the dry ingredients to the wet mixture and stir until well combined.
  5. Fold in your choice of add-ins: golden raisins, dark chocolate chips, pepitas, and flax seeds.
  6. Drop tablespoon-sized portions of the dough onto the prepared baking sheet.
  7. Bake for 12-15 minutes or until the edges are golden.
  8. Let cool before enjoying your breakfast cookies on the go!

Notes
