A flavor-packed dish combining the sweetness of honey and pineapple with juicy chicken, perfect for summer barbecues or quick weeknight dinners.
Ingredients
- 4 boneless, skinless chicken breasts
- 1/2 cup pineapple juice
- 1/4 cup honey
- 2 tbsp soy sauce
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1 tbsp fresh lime juice
- 1 tsp ground ginger
- Salt and pepper to taste
- Fresh cilantro (optional, for garnish)
Instructions
- In a medium bowl, whisk together pineapple juice, honey, soy sauce, olive oil, garlic, lime juice, ginger, salt, and pepper to prepare the marinade.
- Place the chicken breasts in a large zip-top bag or shallow dish and pour the marinade over. Seal or cover, refrigerate for at least 1 hour, or up to 4 hours for more flavor.
- Preheat your grill to medium-high heat and lightly oil the grill grates.
- Remove the chicken from the marinade (discard any remaining marinade) and grill for 6-8 minutes per side until it reaches an internal temperature of 165°F (75°C) and has grill marks.
- Remove the chicken from the grill and let it rest for a few minutes. Garnish with fresh cilantro if desired and serve with your favorite side dishes.
Notes
For added flavor, marinate the chicken overnight. Ensure the grill is hot enough before cooking to get perfect grill marks.
