Description

A delicious and easy recipe that combines sweet honey and pineapple flavors with juicy grilled chicken, perfect for summer barbecues.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/2 cup pineapple juice
  • 1/4 cup honey
  • 2 tbsp soy sauce
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tbsp fresh lime juice
  • 1 tsp ground ginger
  • Salt and pepper to taste
  • Fresh cilantro (optional, for garnish)


Instructions

  1. In a medium bowl, whisk together pineapple juice, honey, soy sauce, olive oil, garlic, lime juice, ginger, salt, and pepper to prepare the marinade.
  2. Place chicken breasts in a large zip-top bag or shallow dish and pour the marinade over them. Seal or cover, then refrigerate for at least 1 hour, or up to 4 hours.
  3. Preheat your grill to medium-high heat and lightly oil the grill grates.
  4. Remove chicken from the marinade (discard any remaining marinade) and grill for 6-8 minutes per side, or until the internal temperature reaches 165°F (75°C).
  5. Once cooked, remove from the grill and let rest for a few minutes. Garnish with fresh cilantro if desired, and serve with your favorite side dishes.

Notes

For even more flavor, marinate the chicken overnight. Use fresh pineapple for the best taste.
