Ingredients
- 1 chicken breast (grilled & sliced)
- 2 cups chopped lettuce
- 1/2 cup cherry tomatoes, halved
- 1/4 cup sweet corn
- 1 boiled egg, halved
- 1/4 cucumber, thinly sliced
- 2 tbsp Greek yogurt or mayonnaise
- 1 tsp Dijon mustard
- 1 tsp lemon juice
- Salt & black pepper to taste
- 1/2 tsp garlic powder
Instructions
- Season the chicken breast with salt and pepper. Grill it until golden and cooked through.
- In a large bowl, combine the chopped lettuce, corn, halved cherry tomatoes, and sliced cucumber.
- In a small bowl, whisk together the Greek yogurt (or mayonnaise), Dijon mustard, lemon juice, garlic powder, and a pinch of salt and pepper until smooth.
- Top the mixed salad with the grilled chicken slices and halved boiled egg.
- Drizzle the creamy dressing over the salad and enjoy fresh!
Notes
For extra flavor, marinate the chicken in lemon juice, olive oil, and herbs before grilling. You can customize with other veggies or proteins like shrimp or tofu.
