A delicious and healthy salad combining fresh ingredients and savory grilled chicken, perfect for lunch or dinner.
Ingredients
- 1 grilled chicken breast, sliced
- 2 cups fresh romaine or mixed greens
- 1/2 avocado, sliced
- 1 boiled egg, sliced
- 1/2 cup cherry tomatoes
- 1/4 cup diced mango
- 1/2 cucumber, sliced
- 2 tbsp crumbled feta cheese
- 2 tbsp olive oil
- 1 tbsp lemon juice
- 1 tsp honey or maple syrup
- 1/2 tsp Dijon mustard
- Salt & pepper to taste
Instructions
- Arrange the greens in a bowl.
- Top the greens with the sliced chicken, avocado, boiled egg, cherry tomatoes, cucumber, mango, and feta cheese.
- In a small bowl, whisk together the olive oil, lemon juice, honey, Dijon mustard, salt, and pepper.
- Drizzle the dressing over the salad just before serving.
- Toss the salad lightly to combine everything.
Notes
Use leftover grilled chicken to save time. Adjust the dressing to your taste by adding more lemon juice or honey.
