Ingredients

  • 1 lb chicken breast, sliced
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1/2 cup Kalamata olives, pitted
  • 1/2 cup crumbled feta cheese
  • 1 cup cooked quinoa
  • 1 lemon, juiced
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)


Instructions

  1. In a bowl, combine chicken slices with lemon juice, olive oil, oregano, salt, and pepper. Let it marinate for at least 30 minutes.
  2. Heat a skillet over medium-high heat and cook the marinated chicken until browned and cooked through.
  3. Divide cooked quinoa among bowls. Top with cooked chicken, cherry tomatoes, cucumber, red onion, Kalamata olives, and feta cheese.
  4. Drizzle any remaining marinade over the bowls for extra flavor.
  5. Sprinkle fresh parsley on top for a pop of color and freshness.
  6. Serve immediately and enjoy the delicious flavors of Greece in every bite!

Notes
