- 1 cup pumpkin puree
- 1 cup brown sugar
- 1/2 cup vegetable oil
- 2 large eggs
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon salt
- 1 cup chopped nuts or oats for crumble
Instructions
- Preheat your oven to 350°F (175°C) and grease a baking dish.
- In a large bowl, mix the pumpkin puree, brown sugar, and vegetable oil until smooth.
- Beat in the eggs one at a time.
- In another bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
- Gradually mix the dry ingredients into the pumpkin mixture until just combined.
- Pour the batter into the prepared baking dish.
- In a separate bowl, combine the chopped nuts or oats with a bit of oil and sprinkle over the top for the crumble.
