Description

Ingredients

  • 2 lbs beef (typically chuck)
  • 4 large onions, chopped
  • 2 tbsp olive oil
  • Salt to taste
  • Pepper to taste
  • 1/2 cup white wine (optional)
  • Herbs (like thyme or bay leaves, optional)


Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add chopped onions and sauté until they are soft and translucent.
  3. Increase the heat to medium-high and add the beef, browning on all sides.
  4. Season with salt and pepper.
  5. Reduce heat to low and cover the pot, cooking slowly for several hours. Stir occasionally, adding a splash of white wine if desired.
  6. Once the beef is tender and the onions have broken down into a rich sauce, remove from heat.
  7. Serve hot with pasta, polenta, or bread.
