Ingredients
- 4 medium potatoes, diced
- 2 large carrots, sliced
- 2 medium zucchini, sliced
- 4 cloves of garlic, minced
- 3 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh parsley, chopped
Instructions
- Preheat the oven to 425°F (220°C).
- In a large bowl, combine diced potatoes, sliced carrots, and zucchini.
- Add minced garlic, olive oil, salt, pepper, and rosemary; toss to coat evenly.
- Spread the veggies in a single layer on a metal baking sheet.
- Roast in the preheated oven for 25-30 minutes, stirring halfway through.
