Ingredients

  • 4 medium potatoes, diced
  • 2 large carrots, sliced
  • 2 medium zucchini, sliced
  • 4 cloves of garlic, minced
  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh parsley, chopped


Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a large bowl, combine diced potatoes, sliced carrots, and zucchini.
  3. Add minced garlic, olive oil, salt, pepper, and rosemary; toss to coat evenly.
