Description

Ingredients

  • 1 large yellow onion, thinly sliced
  • 2 lbs boneless skinless chicken breasts, sliced thin
  • 2 tablespoons olive oil
  • 2 cups chicken broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 cup shredded mozzarella cheese


Instructions

  1. In a large skillet, heat olive oil over medium heat. Add the sliced onions and cook until caramelized, about 15-20 minutes.
  2. Season the chicken breasts with salt, pepper, and garlic powder. Push the onions to the side and add the chicken to the pan. Cook until browned.
  3. Pour in the chicken broth and Worcestershire sauce, bringing to a simmer.
  4. Cover and cook for 10-15 minutes until the chicken is cooked through.
  5. Sprinkle mozzarella cheese on top and cover until melted.
  6. Serve warm with gravy over chicken.

Notes

For extra flavor, add a splash of white wine after browning the chicken. Consider adding cream for a creamier consistency.
