Ingredients

  • 2 lb chicken breasts (or thighs)
  • 3 bell peppers (any color)
  • 1 red onion
  • 1 packet fajita seasoning
  • 2 tbsp olive oil
  • 3 cups shredded cheese


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Grease a casserole dish and spread sliced chicken evenly across the bottom.
  3. Top with sliced bell peppers and red onion.
  4. Sprinkle fajita seasoning over the top.
  5. Drizzle with olive oil and toss to combine.
  6. Cover the casserole with shredded cheese.
  7. Bake in the oven for 30-35 minutes, until the chicken is cooked through and cheese is bubbly.
  8. Allow to cool before serving.
