Ingredients
- 2 lb chicken breasts (or thighs)
- 3 bell peppers (any color)
- 1 red onion
- 1 packet fajita seasoning
- 2 tbsp olive oil
- 3 cups shredded cheese
Instructions
- Preheat the oven to 375°F (190°C).
- Grease a casserole dish and spread sliced chicken evenly across the bottom.
- Top with sliced bell peppers and red onion.
- Sprinkle fajita seasoning over the top.
- Drizzle with olive oil and toss to combine.
- Cover the casserole with shredded cheese.
- Bake in the oven for 30-35 minutes, until the chicken is cooked through and cheese is bubbly.
- Allow to cool before serving.
Notes
You can assemble the casserole ahead of time and refrigerate it. Leftovers reheat beautifully.
