Filipino Lumpia (Crispy Eggrolls)

Description

Delicious crispy eggrolls filled with a savory mixture of meat and vegetables, perfect as a snack or appetizer.


Ingredients

  • 1 pound ground beef or any meat of choice
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 1 cup shredded carrots
  • 1 tablespoon soy sauce
  • 1/2 teaspoon salt and pepper
  • 25 egg roll wrappers
  • Oil for frying


Instructions

  1. In a pan, add the ground meat, onion, and garlic. Cook while stirring frequently until the meat is cooked through. Drain off any excess grease.
  2. Add the shredded carrots into the meat mixture and cook for 2 minutes, stirring occasionally. Season with salt and pepper to taste. Remove the pan from the heat and set it aside.
  3. Lay an egg roll wrapper on a flat work surface. Place 1 1/2 tablespoons of the meat mixture on the lower part of the wrapper.
  4. Fold the sides in, then roll the egg roll wrapper up over the filling. Seal the edge with a little water and set aside.
  5. Deep fry the eggrolls until they are golden brown. Serve with sweet chili sauce. Enjoy!

Notes

Make sure the oil is hot enough before frying for a perfect crispy texture. Don’t overfill the wrappers to prevent bursting.
