Description
A hearty and flavorful casserole combining chicken, rice, and melty cheese, inspired by delicious fajitas for a quick weeknight meal.
Ingredients
- 4 cups shredded cooked chicken
- 2 cups instant rice
- 1 can cream of chicken soup
- 1 cup sour cream
- 1 cup frozen diced onion and bell pepper blend
- 1 can diced tomatoes with chilies
- 1 1/2 cups chicken broth
- 1 packet fajita seasoning
- 1 bag shredded Mexican blend cheese
Instructions
- Lightly spray a 9×13 inch casserole dish with nonstick cooking spray.
- In a large mixing bowl, combine the chicken, rice, cream of chicken soup, sour cream, onion and bell pepper blend, diced tomatoes, chicken broth, fajita seasoning, and half the cheese. Stir until mixed.
- Pour the mixture into the prepared baking dish, spreading it evenly.
- Cover and bake at 350°F for 35 minutes.
- Remove the foil, sprinkle remaining cheese on top, and bake for 10 more minutes.
Notes
For added flavor, garnish with fresh cilantro, jalapeños, or serve with tortilla chips or a simple salad.
