Fajita Chicken Casserole

Description

A delicious and easy dish that combines the great flavors of fajitas into a comforting casserole, perfect for busy weeknights or family gatherings.


Ingredients

  • 4 cups shredded cooked chicken
  • 2 cups instant rice
  • 1 can cream of chicken soup
  • 1 cup sour cream
  • 1 cup frozen diced onion and bell pepper blend
  • 1 can diced tomatoes with chilies
  • 1.5 cups chicken broth
  • 1 packet fajita seasoning
  • 1 bag shredded Mexican blend cheese


Instructions

  1. Lightly spray a 9×13 inch casserole dish with nonstick cooking spray.
  2. In a large mixing bowl, combine the chicken, rice, soup, sour cream, onion and pepper blend, tomatoes, chicken broth, fajita seasoning, and half the cheese. Stir well.
  3. Pour the mixture into the prepared baking dish and spread evenly.
  4. Cover and bake at 350 degrees F for 35 minutes.
  5. Remove the foil, add the remaining cheese, and bake for 10 more minutes.
  6. Let it rest for 5-10 minutes before serving.

Notes

For a vegetarian version, substitute chicken with sautéed mushrooms or a mix of beans. Use rotisserie chicken for a quick option.
