A delicious and easy dish that combines the great flavors of fajitas into a comforting casserole, perfect for busy weeknights or family gatherings.
Ingredients
- 4 cups shredded cooked chicken
- 2 cups instant rice
- 1 can cream of chicken soup
- 1 cup sour cream
- 1 cup frozen diced onion and bell pepper blend
- 1 can diced tomatoes with chilies
- 1.5 cups chicken broth
- 1 packet fajita seasoning
- 1 bag shredded Mexican blend cheese
Instructions
- Lightly spray a 9×13 inch casserole dish with nonstick cooking spray.
- In a large mixing bowl, combine the chicken, rice, soup, sour cream, onion and pepper blend, tomatoes, chicken broth, fajita seasoning, and half the cheese. Stir well.
- Pour the mixture into the prepared baking dish and spread evenly.
- Cover and bake at 350 degrees F for 35 minutes.
- Remove the foil, add the remaining cheese, and bake for 10 more minutes.
- Let it rest for 5-10 minutes before serving.
Notes
For a vegetarian version, substitute chicken with sautéed mushrooms or a mix of beans. Use rotisserie chicken for a quick option.
