Ingredients
- 3 cups shredded cooked chicken breast
- 2 cups instant white rice
- 1 cup bell peppers, sliced
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1 can black beans, rinsed and drained
- 1 packet fajita seasoning
- 2 cups chicken broth
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- In a large mixing bowl, combine the shredded chicken, instant rice, sliced bell peppers, black beans, and fajita seasoning.
- Stir in the chicken broth and mix well.
- Pour the mixture into a greased baking dish.
- Top with shredded cheese.
- Cover with foil and bake for 30 minutes.
- Remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
- Let cool for a few minutes before serving.
Notes
Serve hot with sour cream, guacamole, or salsa. Add cilantro for a fresh touch. Store leftovers in an airtight container for up to 4 days.
