Description

A delicious and easy meal that combines the flavors of fajitas into a cozy casserole. Perfect for family dinners and gatherings.


Ingredients

  • 3 cups shredded cooked chicken breast
  • 2 cups instant white rice
  • 1 cup bell peppers, sliced
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 can black beans, rinsed and drained
  • 1 packet fajita seasoning
  • 2 cups chicken broth
  • Salt and pepper to taste


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine the shredded chicken, instant rice, sliced bell peppers, black beans, and fajita seasoning.
  3. Stir in the chicken broth and mix well.
  4. Pour the mixture into a greased baking dish.
  5. Top with shredded cheese.
  6. Cover with foil and bake for 30 minutes.
  7. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
  8. Let cool for a few minutes before serving.

Notes

Serve hot with sour cream, guacamole, or salsa. Add cilantro for a fresh touch. Store leftovers in an airtight container for up to 4 days.
