Description

A simple and delicious treat perfect for lunch or a snack, packed with flavor and protein.


Ingredients

  • 6 hard-boiled eggs, peeled and chopped
  • 1/4 cup mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 tablespoon fresh chives, chopped
  • Salt and pepper to taste
  • Bread of choice for sandwiches


Instructions

  1. In a mixing bowl, combine the chopped hard-boiled eggs, mayonnaise, Dijon mustard, and chives.
  2. Season with salt and pepper to taste, and mix until well combined.
  3. Spread egg salad mixture onto slices of bread.
  4. Top with another slice of bread, cut into halves or quarters, and serve.

Notes

For a healthier version, use Greek yogurt instead of mayonnaise. Store leftovers in an airtight container in the fridge for 3-4 days.
