Ingredients
- 6 hard-boiled eggs, peeled and chopped
- 1/4 cup mayonnaise
- 1 teaspoon Dijon mustard
- 1 tablespoon fresh chives, chopped
- Salt and pepper to taste
- Bread of choice for sandwiches
Instructions
- In a mixing bowl, combine the chopped hard-boiled eggs, mayonnaise, Dijon mustard, and chives.
- Season with salt and pepper to taste, and mix until well combined.
- Spread egg salad mixture onto slices of bread.
- Top with another slice of bread, cut into halves or quarters, and serve.
Notes
For a healthier version, use Greek yogurt instead of mayonnaise. Store leftovers in an airtight container in the fridge for 3-4 days.
