Ingredients

  • 1 cup sugar
  • 1 cup unsalted butter, softened
  • 2 cups all-purpose flour
  • 1 package (3.4 ounces) pistachio instant pudding mix
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • Optional: chopped pistachios for topping


Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking pan.
  2. In a large bowl, cream together the sugar and butter until light and fluffy.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. In a separate bowl, mix together the flour, pudding mix, baking powder, and salt.
  5. Gradually combine the dry ingredients with the wet ingredients until well mixed.
  6. Spread the batter evenly into the prepared baking pan.
  7. Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
  8. Let cool, then top with chopped pistachios if desired before slicing into bars.
