Ingredients
- 1 cup sugar
- 1 cup unsalted butter, softened
- 2 cups all-purpose flour
- 1 package (3.4 ounces) pistachio instant pudding mix
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- Optional: chopped pistachios for topping
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking pan.
- In a large bowl, cream together the sugar and butter until light and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla extract.
- In a separate bowl, mix together the flour, pudding mix, baking powder, and salt.
- Gradually combine the dry ingredients with the wet ingredients until well mixed.
- Spread the batter evenly into the prepared baking pan.
- Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
- Let cool, then top with chopped pistachios if desired before slicing into bars.
