Description

Delightful dessert with a soft outer layer and a warm, gooey chocolate center, perfect for any occasion.


Ingredients

  • 3/4 cup dark chocolate chips
  • 1/4 cup whole milk
  • 3/4 cup powdered sugar
  • 1/4 cup + 1 tablespoon unsweetened cocoa powder
  • 3/4 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1 cup cake flour
  • 1/2 teaspoon kosher salt
  • 3/4 cup whole milk (room temperature)
  • 1/2 cup vegetable oil
  • 1 teaspoon pure vanilla extract
  • 2 tablespoons powdered sugar (for dusting)
  • Vanilla ice cream (optional)
  • Chocolate syrup (optional)


Instructions

  1. Add dark chocolate chips to a bowl.
  2. Heat whole milk in the microwave for 30 seconds, then pour it over the chocolate. Let it sit for a moment and stir until melted.
  3. Chill the melted chocolate mixture for 20 minutes.
  4. Sift the powdered sugar, cocoa powder, baking powder, and baking soda together in a separate bowl.
  5. Whisk in the cake flour and kosher salt.
  6. Add the room temperature milk, vegetable oil, and vanilla extract to the dry ingredients and mix well.
  7. Scoop the chocolate mixture into an Appé pan.
  8. Fill each cake cup about 2/3 full with the batter.
  9. Scoop some of the chilled chocolate into the center of the batter and cover it with more batter.
  10. Bake for 5-7 minutes, then flip, and bake for 1 more minute.
  11. Dust with powdered sugar, drizzle with chocolate syrup, and serve with a scoop of ice cream if you like.

Notes

Make sure not to overbake the cakes; the goal is to keep the center gooey. Store leftovers in an airtight container in the refrigerator for up to 3 days.
