Easy Homemade Pancake/Crepes Mix

A simple homemade mix for pancakes and crepes that allows you to whip up delicious breakfasts quickly and easily.


Ingredients

  • 4 cups flour
  • 4 tablespoons sugar
  • 1 1/2 teaspoons salt
  • 3 teaspoons baking powder
  • 1 egg (for pancakes)
  • 1 cup milk (for pancakes)
  • 1 teaspoon vanilla (for pancakes)
  • 2 tablespoons butter or oil (for pancakes)
  • 1 cup pancake mix (for pancakes)
  • 2 eggs (for crepes)
  • 1 1/2 cups milk (for crepes)
  • 1 teaspoon vanilla (for crepes)
  • 2 tablespoons butter or oil (for crepes)
  • 1 cup homemade flour mix (for crepes)


Instructions

  1. Make the pancake mix: In a large bowl, mix together 4 cups of flour, 4 tablespoons of sugar, 1 1/2 teaspoons of salt, and 3 teaspoons of baking powder. Store this mix in an airtight container.
  2. To cook pancakes: In a big bowl, add 1 egg, 1 cup of milk, 1 teaspoon of vanilla, and 2 tablespoons of butter or oil. Mix well, then add 1 cup of your pancake mix. Stir until smooth.
  3. Heat a pan with a little oil or butter. Pour in 1/4 cup of batter for each pancake. Cook on low-medium heat until golden brown on each side. Serve warm.
  4. To make crepes: In a large bowl, add 2 eggs, 1 1/2 cups of milk, 1 teaspoon of vanilla, and 2 tablespoons of butter or oil. Mix until combined, then stir in 1 cup of your homemade flour mix until smooth.
  5. In a pan with some oil or butter, pour in 1/4 cup of batter and swirl to coat the pan. Cook on low heat until the bottom is light brown, then flip and cook for another minute. Serve warm.

Notes

Store the mix in a cool, dry place for several weeks. Shake well before use.
