A delicious and comforting dish that combines tender chicken, creamy Alfredo sauce, and crispy potatoes, perfect for family dinners or special occasions.
Ingredients
- 1 lb boneless, skinless chicken breasts, sliced into 1/2-inch thick cutlets
- 2 tbsp olive oil
- 4 cloves garlic, minced
- 1/2 cup grated Parmesan cheese (for crusting)
- 1 tsp dried Italian herbs
- Salt & freshly cracked black pepper to taste
- 2 medium Yukon Gold potatoes, cut into 1-inch cubes
- 3 tbsp olive oil
- 1/2 cup grated Parmesan cheese
- 1/2 cup shredded mozzarella cheese (for coating potatoes)
- 5 cloves garlic, minced
- 1 tsp dried rosemary
- 2 tbsp butter
- 8 oz cremini mushrooms, sliced
- 3 cloves garlic, minced
- 1/4 cup fresh basil leaves
- 1 1/2 cups heavy cream
- 3/4 cup grated Parmesan cheese (for sauce)
- 2-3 tsp white truffle oil
- Shaved Parmesan cheese (for final garnish)
Instructions
- Preheat your oven to 200°C (400°F). Toss the potato cubes with olive oil, grated Parmesan, shredded mozzarella, minced garlic, rosemary, salt, and pepper. Spread them in a single layer on a baking sheet and roast for 25-30 minutes until golden and crispy.
- While the potatoes are roasting, toss the chicken slices with olive oil, minced garlic, grated Parmesan, Italian herbs, salt, and pepper. Press the Parmesan onto the chicken to create a crust. Cook the chicken in a skillet over medium-high heat for 2-3 minutes on each side until cooked through.
- In the same skillet, melt butter, add the mushrooms and minced garlic, and cook until softened. Stir in fresh basil, heavy cream, and grated Parmesan until everything is melted and smooth. Add the truffle oil and season with salt and pepper.
- Reduce the heat to low, add the chicken slices to the sauce, and stir to coat. Serve the chicken Alfredo over the cheesy roasted potatoes, garnished with shaved Parmesan.
Notes
For added flavor, use freshly grated Parmesan cheese for both the chicken and the sauce. Feel free to adjust the amount of truffle oil based on your taste preference.
