Description

A delicious, tropical treat made with pineapple and vanilla ice cream, perfect for cooling down on a hot day.

Ingredients

  • 2 cups frozen pineapple chunks
  • 3/4 cup vanilla ice cream
  • 4 ounces pineapple juice
  • 2 tablespoons granulated sugar (optional)
  • 1/2 teaspoon fresh lemon juice
  • A pinch of fine sea salt

Instructions

  1. In a high-powered blender, add the frozen pineapple, vanilla ice cream, pineapple juice, sugar (if using), lemon juice, and salt.
  2. Blend on high for 2–3 minutes, stopping to scrape down the sides as needed.
  3. Continue blending until the mixture is ultra-creamy and resembles soft-serve ice cream.
  4. Transfer the mixture to a freezer-safe container and chill for 30–40 minutes to firm slightly.
  5. Spoon the mixture into a piping bag fitted with a large star tip and swirl into chilled dessert cups.
  6. For a firmer texture, place the swirled cups back in the freezer for 15–20 minutes before serving.
  7. Optionally, pour pineapple juice into a glass, top with a swirl of the soft serve, and garnish with a maraschino cherry to create a Dole Whip Float.

Notes

Use frozen pineapple for the best texture. Adjust sugar level to taste and experiment with toppings like toasted coconut.
