Ingredients
- 2 overripe bananas
- 1 cup flour
- 1/2 cup sugar
- 1/2 cup butter (salted)
- 1 egg
- 1 box instant vanilla pudding mix
- 1 tsp vanilla extract
- 1 tsp baking powder
- 1/2 tsp salt
- 1 cup fresh strawberries (chopped)
- Optional: white chocolate chips, walnuts, cinnamon
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, mash the overripe bananas.
- Mix in the melted butter and sugar until well combined.
- Add the egg and vanilla extract, stirring until smooth.
- In a separate bowl, combine the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture until just combined.
- Fold in the instant pudding mix and chopped strawberries until incorporated.
- Scoop the dough onto a baking sheet lined with parchment paper.
- Bake for 12-15 minutes or until golden brown.
- Let cool before serving.
Notes
Chilling the dough for an hour before baking can enhance the flavor and texture. For a unique twist, try adding crushed vanilla wafers or drizzling melted white chocolate on top before serving.
