Ingredients

  • 2 overripe bananas
  • 1 cup flour
  • 1/2 cup sugar
  • 1/2 cup butter (salted)
  • 1 egg
  • 1 box instant vanilla pudding mix
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 cup fresh strawberries (chopped)
  • Optional: white chocolate chips, walnuts, cinnamon


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mash the overripe bananas.
  3. Mix in the melted butter and sugar until well combined.
  4. Add the egg and vanilla extract, stirring until smooth.
  5. In a separate bowl, combine the flour, baking powder, and salt.
  6. Gradually add the dry ingredients to the wet mixture until just combined.
  7. Fold in the instant pudding mix and chopped strawberries until incorporated.
  8. Scoop the dough onto a baking sheet lined with parchment paper.
  9. Bake for 12-15 minutes or until golden brown.
