Description

A delightful summer dessert combining a buttery sugar cookie crust with a creamy lemonade layer, perfect for BBQs and family gatherings.


Ingredients

  • 1 cup butter, softened
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup powdered sugar
  • 1 package (8 oz) cream cheese, softened
  • 1/4 cup lemon juice
  • Zest of 1 lemon
  • Coarse sugar for topping


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, cream together butter, granulated sugar, and powdered sugar until smooth.
  3. Gradually add flour until combined.
  4. Press half of the dough into the bottom of a greased baking pan to form the crust.
  5. Bake for 15-20 minutes until lightly golden.
  6. In another bowl, mix cream cheese, lemon juice, and lemon zest until smooth.
  7. Spread the cream cheese mixture over the baked cookie layer.
  8. Crumble the remaining dough on top and sprinkle with coarse sugar.
  9. Return to the oven and bake for an additional 20-25 minutes.
  10. Let cool and chill in the fridge before serving.

Notes

For a twist, try adding lime juice or berries in the lemonade layer. Can be served chilled or at room temperature.
