Description
A fresh and healthy salad featuring cucumbers, chickpeas, and spinach, topped with a creamy Greek yogurt dressing.
Ingredients
- 1 large cucumber, peeled, seeded, and chopped
- 1 (15-ounce) can chickpeas, rinsed and drained
- 5 ounces fresh spinach, washed and dried
- 1/2 red onion, thinly sliced
- 1/4 cup chopped fresh dill
- 1/4 cup chopped fresh mint
- 1/4 cup crumbled feta cheese (optional)
- 1 cup plain Greek yogurt
- 2 tablespoons lemon juice
- 2 tablespoons olive oil
- 1 clove garlic, minced
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- In a large bowl, combine the chopped cucumber, rinsed chickpeas, fresh spinach, thinly sliced red onion, chopped dill, and chopped mint. If using, add the crumbled feta cheese.
- In a separate small bowl, whisk together the plain Greek yogurt, lemon juice, olive oil, minced garlic, dried oregano, salt, and black pepper until well combined.
- Pour the Greek yogurt dressing over the salad and toss gently to coat all the ingredients.
- For best flavor, chill the salad in the refrigerator for at least 15 minutes before serving.
- Serve the salad chilled.
Notes
Store any leftovers in an airtight container in the refrigerator, best enjoyed within 1-2 days.
