Description

A fresh and healthy salad featuring cucumbers, chickpeas, and spinach, topped with a creamy Greek yogurt dressing.


Ingredients

  • 1 large cucumber, peeled, seeded, and chopped
  • 1 (15-ounce) can chickpeas, rinsed and drained
  • 5 ounces fresh spinach, washed and dried
  • 1/2 red onion, thinly sliced
  • 1/4 cup chopped fresh dill
  • 1/4 cup chopped fresh mint
  • 1/4 cup crumbled feta cheese (optional)
  • 1 cup plain Greek yogurt
  • 2 tablespoons lemon juice
  • 2 tablespoons olive oil
  • 1 clove garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper


Instructions

  1. In a large bowl, combine the chopped cucumber, rinsed chickpeas, fresh spinach, thinly sliced red onion, chopped dill, and chopped mint. If using, add the crumbled feta cheese.
  2. In a separate small bowl, whisk together the plain Greek yogurt, lemon juice, olive oil, minced garlic, dried oregano, salt, and black pepper until well combined.
  3. Pour the Greek yogurt dressing over the salad and toss gently to coat all the ingredients.
  4. For best flavor, chill the salad in the refrigerator for at least 15 minutes before serving.
  5. Serve the salad chilled.

Notes

Store any leftovers in an airtight container in the refrigerator, best enjoyed within 1-2 days.
