Description
A delicious and easy recipe that combines sweet and savory flavors with juicy chicken, tangy BBQ sauce, and sweet pineapple.
Ingredients
- 4 boneless, skinless chicken breasts (or thighs)
- 1 (20 oz) can pineapple chunks in juice, undrained
- 1 cup BBQ sauce
- 1 clove garlic, minced (optional)
- 1/2 small onion, finely diced (optional)
- Salt & pepper to taste
- Optional: fresh cilantro or green onion for garnish
Instructions
- Place the chicken in the bottom of your Crockpot.
- Add the pineapple chunks with juice, BBQ sauce, garlic, onion, salt, and pepper.
- Stir to coat the chicken evenly.
- Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until the chicken is tender and shreds easily.
- Shred the chicken with two forks right in the Crockpot and stir everything together.
- Serve the dish over rice, on buns, or in tacos. Drizzle extra sauce on top if desired.
Notes
For extra flavor, marinate the chicken in BBQ sauce overnight. Optional: add crushed red pepper flakes for heat.
