Description
A delicious and healthy salad featuring crispy chicken tenders and fresh vegetables, perfect for lunch or dinner.
Ingredients
- 2 chicken breasts, cut into strips
- 1/2 cup (60 g) flour
- 2 eggs, beaten
- 1 cup (100 g) breadcrumbs
- Salt & pepper to taste
- 1/4 cup (60 ml) olive oil for frying
- 3 cups (180 g) chopped romaine lettuce
- 1/2 cup (80 g) cherry tomatoes, halved
- 1/2 cucumber, sliced
- 1/4 red onion, thinly sliced
- 2 tbsp ranch or honey mustard dressing
Instructions
- Season the chicken strips with salt and pepper.
- Dredge the chicken strips in flour, dip them in the beaten eggs, and coat them with breadcrumbs.
- Heat olive oil in a pan over medium heat and cook the chicken until golden and crispy, about 3–4 minutes per side.
- In a bowl, combine chopped romaine lettuce, halved cherry tomatoes, sliced cucumber, and thinly sliced red onion.
- Place the crispy chicken on top of the salad mixture, drizzle with dressing, and serve immediately.
Notes
For extra flavor, marinate the chicken in your favorite spices for 30 minutes before cooking. Keep the chicken hot when serving to maintain its crispiness. You can also use panko breadcrumbs for a crunchier texture.
