Ingredients

  • Fresh asparagus spears
  • All-purpose flour
  • Eggs
  • Panko breadcrumbs
  • Grated Parmesan cheese
  • Garlic powder
  • Salt

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Line a baking sheet with parchment paper.
  3. Set up three shallow dishes: one with flour, one with beaten eggs, and one with a mixture of panko breadcrumbs, Parmesan cheese, garlic powder, salt, and pepper.
  4. Roll each asparagus spear in flour.
  5. Dip the floured asparagus in egg.
  6. Coat the asparagus in the breadcrumb mixture.
  7. Arrange the coated asparagus on the baking sheet in a single layer.
  8. Lightly spritz the asparagus with cooking spray or drizzle with olive oil.
