Description

Hearty burritos filled with tender, shredded beef in a rich, spicy sauce and topped with gooey cheese.


Ingredients

  • 2-3 lbs beef chuck roast, cut into chunks
  • 1 jar (16 oz) Hatch Chile Colorado sauce
  • Flour tortillas
  • 2 cups shredded cheese (cheddar or a blend)
  • Salt and pepper to taste
  • Olive oil (for browning the meat)


Instructions

  1. In a large pot, heat olive oil over medium heat. Brown the beef chunks on all sides, then season with salt and pepper.
  2. Add the Hatch Chile Colorado sauce to the pot, cover, and let it simmer on low heat for 3-4 hours or until the beef is tender.
  3. Once the beef is cooked, shred it and mix it with the sauce.
  4. Preheat the oven to 350°F (175°C).
  5. Take a tortilla, fill it with the beef mixture, and sprinkle cheese on top. Roll it up and place it seam side down in a baking dish.
  6. Repeat this for all tortillas.
  7. Pour any leftover sauce over the burritos and sprinkle with remaining cheese.
  8. Bake in the preheated oven for 20-25 minutes, until the cheese is bubbling and golden.
  9. Serve hot.

Notes

Make sure to brown the beef well for added flavor. Adjust the sauce to your spice preference. Consider adding vegetables like onions or peppers for extra texture.
