Description
Hearty burritos filled with tender, shredded beef in a rich, spicy sauce and topped with gooey cheese.
Ingredients
- 2-3 lbs beef chuck roast, cut into chunks
- 1 jar (16 oz) Hatch Chile Colorado sauce
- Flour tortillas
- 2 cups shredded cheese (cheddar or a blend)
- Salt and pepper to taste
- Olive oil (for browning the meat)
Instructions
- In a large pot, heat olive oil over medium heat. Brown the beef chunks on all sides, then season with salt and pepper.
- Add the Hatch Chile Colorado sauce to the pot, cover, and let it simmer on low heat for 3-4 hours or until the beef is tender.
- Once the beef is cooked, shred it and mix it with the sauce.
- Preheat the oven to 350°F (175°C).
- Take a tortilla, fill it with the beef mixture, and sprinkle cheese on top. Roll it up and place it seam side down in a baking dish.
- Repeat this for all tortillas.
- Pour any leftover sauce over the burritos and sprinkle with remaining cheese.
- Bake in the preheated oven for 20-25 minutes, until the cheese is bubbling and golden.
- Serve hot.
Notes
Make sure to brown the beef well for added flavor. Adjust the sauce to your spice preference. Consider adding vegetables like onions or peppers for extra texture.
