A comforting and hearty dish that combines earthy mushrooms, crunchy celery, and soft potatoes in a creamy broth with pasta, perfect for chilly days.
Ingredients
- 2 tablespoons butter or olive oil
- 1 medium onion, finely chopped
- 3–4 celery stalks, sliced
- 2 medium potatoes, cubed
- 1 cup mushrooms, sliced
- 4 cups vegetable broth
- 1 cup pasta of choice
- 1/2 cup cream or milk
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot, heat the butter or olive oil over medium heat. Add the chopped onion and sauté until translucent.
- Add the sliced celery and cook for 3-4 minutes.
- Stir in the cubed potatoes and sliced mushrooms, cooking until slightly softened.
- Pour in the vegetable broth and bring to a boil.
- Add the pasta and cook according to package instructions until al dente.
- Reduce heat and stir in cream or milk. Season with salt and pepper.
- Garnish with fresh parsley before serving.
Notes
For extra flavor, add garlic when cooking the onions. This soup can be made vegan by using plant-based alternatives.
