Description
A delicious and healthy chicken salad packed with cranberries and walnuts, perfect for lunch or a light dinner.
Ingredients
- 2 1/2 cups canned chicken in water, drained (2 14oz containers)
- 1/2 cup mayo
- 1/3 cup Greek yogurt
- 3/4 cup dried cranberries
- 2/3 cup chopped walnuts
- 1/2 cup chopped celery
- 1/3 cup chopped onion
- 1 tablespoon lemon juice
- 2 teaspoons dried dill
- 1 teaspoon ground cumin
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
Instructions
- In a large mixing bowl, add all the ingredients.
- Mix well until everything is nicely combined.
- Serve chilled with crackers, on toasted bread, on a bed of salad greens, or enjoy as is!
Notes
For a creamier texture, adjust the ratio of mayo and Greek yogurt to your liking. Toasting the walnuts before adding them can enhance their flavor.
