Description

A delicious and healthy chicken salad packed with cranberries and walnuts, perfect for lunch or a light dinner.


Ingredients

  • 2 1/2 cups canned chicken in water, drained (2 14oz containers)
  • 1/2 cup mayo
  • 1/3 cup Greek yogurt
  • 3/4 cup dried cranberries
  • 2/3 cup chopped walnuts
  • 1/2 cup chopped celery
  • 1/3 cup chopped onion
  • 1 tablespoon lemon juice
  • 2 teaspoons dried dill
  • 1 teaspoon ground cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper


Instructions

  1. In a large mixing bowl, add all the ingredients.
  2. Mix well until everything is nicely combined.
  3. Serve chilled with crackers, on toasted bread, on a bed of salad greens, or enjoy as is!

Notes

For a creamier texture, adjust the ratio of mayo and Greek yogurt to your liking. Toasting the walnuts before adding them can enhance their flavor.
