Description

Delicious and easy chicken meatballs featuring a vibrant cranberry and orange glaze, perfect for dinner or as a party snack.


Ingredients

  • 1 lb ground chicken
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg, lightly beaten
  • 2 tbsp fresh parsley, chopped
  • 1/2 cup cranberry sauce
  • 1/4 cup orange juice
  • 1 tsp garlic powder
  • Salt and pepper to taste


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, combine ground chicken, breadcrumbs, Parmesan cheese, egg, parsley, garlic powder, salt, and pepper. Mix until just combined.
  3. Form the mixture into meatballs and place them on a baking sheet.
  4. In a separate bowl, whisk together cranberry sauce and orange juice.
  5. Drizzle the sauce over the meatballs.
  6. Bake for 20-25 minutes or until cooked through.
  7. Serve warm with additional sauce if desired.
