Delicious and easy chicken meatballs featuring a vibrant cranberry and orange glaze, perfect for dinner or as a party snack.
Ingredients
- 1 lb ground chicken
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 egg, lightly beaten
- 2 tbsp fresh parsley, chopped
- 1/2 cup cranberry sauce
- 1/4 cup orange juice
- 1 tsp garlic powder
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, combine ground chicken, breadcrumbs, Parmesan cheese, egg, parsley, garlic powder, salt, and pepper. Mix until just combined.
- Form the mixture into meatballs and place them on a baking sheet.
- In a separate bowl, whisk together cranberry sauce and orange juice.
- Drizzle the sauce over the meatballs.
- Bake for 20-25 minutes or until cooked through.
- Serve warm with additional sauce if desired.
