Description

A creamy and delicious soup combining chicken, ranch dressing, and cheese, perfect for busy weeknights or cold weather.


Ingredients

  • 8 oz. angel hair pasta
  • 1 lb boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 4 cups chicken broth
  • 1 packet ranch dressing mix
  • 1 cup cream cheese
  • 1 cup shredded cheddar cheese
  • 1/2 cup bacon, cooked and crumbled
  • 1/2 cup green onions, chopped


Instructions

  1. In a pot, heat olive oil over medium heat. Add chicken breasts and brown on both sides.
  2. Pour in chicken broth and bring to a boil. Add ranch dressing mix.
  3. Reduce heat, cover, and let simmer for 20-25 minutes until the chicken is cooked through.
  4. Remove chicken, shred it, and return to the pot.
  5. Stir in cream cheese until melted, then add cooked angel hair pasta.
  6. Top with cheddar cheese, bacon, and green onions before serving.

Notes

For extra creaminess, use half-and-half instead of cream cheese. Add more vegetables like carrots or celery for added nutrition. Make sure to shred the chicken well to mix evenly with the soup.
