A creamy and delicious soup combining chicken, ranch dressing, and cheese, perfect for busy weeknights or cold weather.
Ingredients
- 8 oz. angel hair pasta
- 1 lb boneless, skinless chicken breasts
- 1 tbsp olive oil
- 4 cups chicken broth
- 1 packet ranch dressing mix
- 1 cup cream cheese
- 1 cup shredded cheddar cheese
- 1/2 cup bacon, cooked and crumbled
- 1/2 cup green onions, chopped
Instructions
- In a pot, heat olive oil over medium heat. Add chicken breasts and brown on both sides.
- Pour in chicken broth and bring to a boil. Add ranch dressing mix.
- Reduce heat, cover, and let simmer for 20-25 minutes until the chicken is cooked through.
- Remove chicken, shred it, and return to the pot.
- Stir in cream cheese until melted, then add cooked angel hair pasta.
- Top with cheddar cheese, bacon, and green onions before serving.
Notes
For extra creaminess, use half-and-half instead of cream cheese. Add more vegetables like carrots or celery for added nutrition. Make sure to shred the chicken well to mix evenly with the soup.
