Ingredients

  • 2 cups cooked pasta (e.g., penne or fusilli)
  • 1 cup cherry tomatoes, halved
  • 1 cup black beans, drained and rinsed
  • 1 cup corn kernels (fresh or frozen)
  • 1 red bell pepper, diced
  • 1/2 red onion, chopped
  • 1 cup shredded cheese (e.g., cheddar or Monterey Jack)
  • 1/2 cup ranch dressing
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh cilantro for garnish


Instructions

  1. In a large mixing bowl, combine the cooked pasta, cherry tomatoes, black beans, corn, red bell pepper, red onion, and shredded cheese.
  2. In a small bowl, whisk together the ranch dressing, olive oil, salt, and pepper.
  3. Pour the dressing over the pasta salad and toss until everything is evenly coated.
  4. Chill in the refrigerator for at least 30 minutes before serving.
