Ingredients
- 1 cup of rice
- 2 cups of water
- 1 tablespoon of olive oil

- 1/2 teaspoon of pepper
- 1 onion, chopped
- 2 cloves of garlic, minced
- 1 bell pepper, diced
- 1 cup of mixed vegetables
- Protein of choice (chicken, tofu, or beans)
Instructions
- In a pot, bring 2 cups of water to a boil and add the rice, salt, and olive oil.
- Reduce heat, cover, and simmer for about 20 minutes or until the rice is cooked.
- In a separate pan, sauté the onion and garlic until translucent.
- Add the bell pepper and mixed vegetables, cooking until tender.
- Stir in your protein choice and heat through.
- Combine the cooked rice with the sautéed vegetables and protein, mixing well.
