Description

Ingredients

  • 1 bell pepper, diced
  • 1 cup of mixed vegetables
  • Protein of choice (chicken, tofu, or beans)


Instructions

  1. In a pot, bring 2 cups of water to a boil and add the rice, salt, and olive oil.
  2. Reduce heat, cover, and simmer for about 20 minutes or until the rice is cooked.
  3. In a separate pan, sauté the onion and garlic until translucent.
  4. Add the bell pepper and mixed vegetables, cooking until tender.
  5. Stir in your protein choice and heat through.
  6. Combine the cooked rice with the sautéed vegetables and protein, mixing well.
