Delightful muffins combining cinnamon and sugar with the classic flavors of French toast, perfect for breakfast or a sweet snack.
Ingredients
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 2 teaspoons baking powder
- 1/4 teaspoon fine sea salt
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg (optional)
- 1/2 cup unsalted butter, melted and slightly cooled
- 1 cup milk (dairy or unsweetened plant-based)
- 2 large eggs, room temperature
- 1 teaspoon pure vanilla extract
- 1/2 cup granulated sugar (for topping)
- 1 tablespoon ground cinnamon (for topping)
Instructions
- Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or grease it thoroughly.
- In a large bowl, whisk together the flour, 1 cup of sugar, baking powder, salt, 1 teaspoon of cinnamon, and nutmeg (if using).
- In another bowl, whisk together the melted butter, milk, eggs, and vanilla extract until smooth.
- Combine the wet ingredients with the dry ingredients, stirring gently until just combined.
- Fill each muffin cup two-thirds full with the batter.
- Bake for 20-25 minutes, or until a toothpick inserted in the center comes out clean.
- While the muffins are baking, mix together 1/2 cup of sugar and 1 tablespoon of cinnamon in a small bowl.
- Once the muffins are done, let them cool in the tin for about 5 minutes. Then, dip the tops of the muffins in the cinnamon-sugar mixture. Optionally, broil for 2-3 minutes for extra crispiness.
- Serve warm or at room temperature.
Notes
Best enjoyed fresh out of the oven; can be served with maple syrup or fresh fruit.
