Description

Delightful muffins combining cinnamon and sugar with the classic flavors of French toast, perfect for breakfast or a sweet snack.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon fine sea salt
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg (optional)
  • 1/2 cup unsalted butter, melted and slightly cooled
  • 1 cup milk (dairy or unsweetened plant-based)
  • 2 large eggs, room temperature
  • 1 teaspoon pure vanilla extract
  • 1/2 cup granulated sugar (for topping)
  • 1 tablespoon ground cinnamon (for topping)


Instructions

  1. Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or grease it thoroughly.
  2. In a large bowl, whisk together the flour, 1 cup of sugar, baking powder, salt, 1 teaspoon of cinnamon, and nutmeg (if using).
  3. In another bowl, whisk together the melted butter, milk, eggs, and vanilla extract until smooth.
  4. Combine the wet ingredients with the dry ingredients, stirring gently until just combined.
  5. Fill each muffin cup two-thirds full with the batter.
  6. Bake for 20-25 minutes, or until a toothpick inserted in the center comes out clean.
  7. While the muffins are baking, mix together 1/2 cup of sugar and 1 tablespoon of cinnamon in a small bowl.
  8. Once the muffins are done, let them cool in the tin for about 5 minutes. Then, dip the tops of the muffins in the cinnamon-sugar mixture. Optionally, broil for 2-3 minutes for extra crispiness.
  9. Serve warm or at room temperature.

Notes

Best enjoyed fresh out of the oven; can be served with maple syrup or fresh fruit.
