Ingredients

  • 2 tablespoons olive oil or butter
  • 2 large onions, thinly sliced
  • 3 garlic cloves, minced
  • 4 chicken thighs or breasts
  • 1 cup apple cider
  • 2 sprigs fresh thyme
  • 1 sprig fresh rosemary
  • Salt and pepper to taste


Instructions

  1. In a large skillet, heat olive oil or butter over medium heat.
  2. Add sliced onions and cook until caramelized, about 15-20 minutes.
  3. Stir in minced garlic and cook for another minute.
  4. Add chicken thighs or breasts to the skillet and sear on both sides until golden brown.
  5. Pour in the apple cider and add thyme and rosemary.
  6. Season with salt and pepper.
  7. Cover and simmer for 30-40 minutes, until chicken is cooked through.
  8. Serve warm with caramelized onions on top.

Notes
