Description

A light and vibrant salad packed with protein from chickpeas and sweet corn, tossed in a zesty lime sauce.


Ingredients

  • 1 (15-ounce) can chickpeas, drained and rinsed
  • 1 cup frozen sweet corn, thawed
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1/2 cup red onion, finely chopped
  • 1/4 cup chopped fresh cilantro
  • 1 avocado, diced (optional)
  • 1/4 cup lime juice
  • 2 tablespoons olive oil
  • 1 tablespoon maple syrup
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper


Instructions

  1. In a large bowl, combine chickpeas, sweet corn, red bell pepper, yellow bell pepper, red onion, and cilantro.
  2. In a small bowl, whisk together lime juice, olive oil, maple syrup, chili powder, cumin, salt, and black pepper.
  3. Pour the lime sauce over the salad mixture and gently toss to coat.
  4. If using, add the diced avocado and toss again.
  5. Cover and refrigerate for at least 30 minutes.
  6. Before serving, give the salad another gentle toss and enjoy chilled.

Notes

For more texture, consider adding diced cucumber or cherry tomatoes. You can also switch the beans or add other vegetables according to your preference.
