Ingredients

  • 1/2 cup dried green lentils, rinsed
  • 1 cup water
  • 1 (15-ounce) can chickpeas, drained and rinsed
  • 1/2 cup chopped red bell pepper
  • 1/2 cup chopped cucumber
  • 1/4 cup chopped red onion
  • 1/4 cup chopped fresh parsley
  • 1/4 cup crumbled feta cheese (optional)
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 tablespoon chopped fresh oregano
  • 1 tablespoon chopped fresh thyme
  • 1 clove garlic, minced
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper


Instructions

  1. In a small saucepan, combine the lentils and water. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until tender. Drain excess water and let cool.
  2. In a large bowl, combine the cooked lentils, chickpeas, red bell pepper, cucumber, red onion, and parsley. If desired, add feta cheese.
  3. In a small bowl, whisk together olive oil, lemon juice, oregano, thyme, minced garlic, salt, and pepper.
  4. Pour the dressing over the salad and toss gently to combine.
  5. Serve immediately or chill for later. Enjoy as a main dish or side.

Notes

Rinse lentils before cooking to remove any dust. For extra nutrition, add more vegetables like carrots or spinach.
