Ingredients
- 1/2 cup dried green lentils, rinsed
- 1 cup water
- 1 (15-ounce) can chickpeas, drained and rinsed
- 1/2 cup chopped red bell pepper
- 1/2 cup chopped cucumber
- 1/4 cup chopped red onion
- 1/4 cup chopped fresh parsley
- 1/4 cup crumbled feta cheese (optional)
- 3 tablespoons olive oil
- 2 tablespoons lemon juice
- 1 tablespoon chopped fresh oregano
- 1 tablespoon chopped fresh thyme
- 1 clove garlic, minced
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- In a small saucepan, combine the lentils and water. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until tender. Drain excess water and let cool.
- In a large bowl, combine the cooked lentils, chickpeas, red bell pepper, cucumber, red onion, and parsley. If desired, add feta cheese.
- In a small bowl, whisk together olive oil, lemon juice, oregano, thyme, minced garlic, salt, and pepper.
- Pour the dressing over the salad and toss gently to combine.
- Serve immediately or chill for later. Enjoy as a main dish or side.
Notes
Rinse lentils before cooking to remove any dust. For extra nutrition, add more vegetables like carrots or spinach.
